Every year in the 3rd month by lunar calendar, mature female silver anchovy would migrate to Penghu to spawn, where the waters are rich with seaweeds. Summer is the high season for silver anchovy fishing. During this time, fishing boats are frequently seen on the waters at night. Fishermen would equip their fishing boats with cooking facilities to cook the fish immediately once they are caught. This is to ensure the freshness of the fish before sun-drying and further processing on shore, to make the Penghu food specialty, dried silver anchovies. Silver anchovies are small when spawned. They grow to a medium size (about 5cm) as they become youth in May, and mature (about 7cm) in July and August. Silver anchovies contain a great quantity of calcium, and make an important fish product in Penghu. Many locals sun-dry the fish to preserve them and many restaurants here serve stir-fried dried silver anchovies with peanuts for the appetizer.
