1 Penghu Cactus

仙人掌
Plenty of vendors can be found selling cactus ice in the streets of Penghu. There are 6 species of cactuses, only one with edible fruit, and that is the main ingredient for cactus ice. The origin of this succulent plant is in Mexico and the West Indies. Its shrubs can grow up to 2m tall, while the stem remains flat and wide, rich with flesh and thorny. Every summer, beautiful yellow flowers will sprout from the top of its oval-shaped prickly leaves. According to records, this specie of cactus was introduced by the Dutch in 1645, and has fully adapted to Penghu's geographical environment. The berry-like fruits are of a dark red color that resembles apples, thus earning them the name of "Penghu Red Apples."

These fruits have thorns on the inside as well as on the outside, making the process of obtaining flesh and seeds particularly difficult. Cactus juice can be made into iced desserts, jam, and fruit drinks. Many tourists are drawn to this refreshingly sweet and sour-ish taste of cactus ice, which is another must-try of Penghu's special dish.
